- 1 tbsp unsalted butter, diced

Instructions:
- Make the crust:
- In a large bowl, combine the flour, salt, and sugar.
- Add the cold butter cubes and use a pastry cutter or your hands to work the butter into the flour until it resembles coarse crumbs.
- Slowly add the ice water, 1 tbsp at a time, and mix just until the dough begins to come together.
- Divide the dough into two disks, wrap them in plastic, and refrigerate for at least 1 hour.
- Prepare the filling:
- Peel, core, and slice the apples into thin slices.
- In a large bowl, toss the apple slices with the sugar, brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch (or flour).
- Let the apples sit for about 15-20 minutes to release some of their juices.
- Assemble the pie:
- Preheat the oven to 425°F (220°C).
- Roll out one disk of dough on a lightly floured surface to fit a 9-inch pie dish. Carefully transfer the dough to the pie dish, pressing it gently into the corners.
